Barry’s Dad, Dave, grows some great buttercup squash. Here’s a fun appetizer we invented with some leftover squash.

1 C cooked peeled winter squash
1 tsp cumin
2 tsp chili powder
1 tsp oregano
1 clove garlic, minced
1/2 tsp salt
dash cayenne
Mash squash with spices, heat in microwave until hot.

24 scoop-shaped tortilla chips
4 oz cheddar cheese, grated

Place a spoonful of the squash mixture in each chip, top with cheese. Broil until cheese is melted and bubbly. They’ll be hot — don’t burn your tongue!
