These instructions are for making it on the stovetop with a heavy cast-iron pan, but you can also do this in the oven.
Combine in a bowl:
1 C flour
6 T butter
Dash salt
Mix with a fork until it resembles coarse cornmeal. Pat into a heavy cast-iron pan with a lid and cook for about 10 minutes over medium heat.
Top with:
1 sliced onion
1 diced green, red, or yellow pepper (optional)
1 C grated Cheddar cheese
Beat together:2 eggs
1/4 C milk
Salt and pepper
Pour this over the toppings.
Cover with sliced or canned tomatoes and sprinkle with bread or cracker crumbs. Continue cooking, covered, until it is golden and the eggs are set.
