This makes a good food gift for friends and family. For a nice sweet and salty contrast, serve a bowl of these alongside a bowl of Tamari-Roasted Almonds.
2 large egg whites
1 C sugar
1/8 t salt
2 lb walnuts
1 stick of butter
Preheat oven to 325. In a 9×13 pan, put the stick of butter and place it in the oven to melt.
Meanwhile, beat the egg whites in a medium bowl until soft peaks form. Stir in the sugar and salt, then fold in the walnuts. Spread this mixture in the pan with the melted butter.
Bake for 30 minutes, stirring every 10 minutes. The butter will be absorbed as the nuts roast.
Pour onto a silicone mat or waxed paper to cool, then break up.
