Tabouli salad with pistachios and dried fruit

Serves 8
1-3/4 C boiling water
1-1/2 C bulgur
1-1/2 t salt
1/3 C fresh lemon juice
1/4 t fresh-cracked black pepper
1/4 C olive oil
3 small tomatoes, diced
4 green onions, sliced
3/4 C coarsely chopped dried apricots, golden raisins, or dried apples
3/4 C shelled pistachios, toasted
1 can garbanzo beans
1/4 C chopped fresh mint or cilantro
1/2 C coarsely chopped parsley

Cover the bulgur with the water and let sit for a half hour. Drain any excess water.

In a large bowl, combine the remaining ingredients. Mix well and stir in the bulgur. Refrigerate and allow flavors to blend for a couple of hours before serving.
