This was our 2023 New Year’s Eve dinner. Each person got to create their own pizza crust and assemble their perfect pizza — the most noteworthy was Linnea’s perfectly handmade cheese-stuffed crust. We were all impressed!

For four people, here’s what you’ll need:

  • 1 batch of pizza sauce (see below)
  • 1 batch of pizza dough (see below)
  • At least 8 oz of grated mozzarella (or up to 16 oz for cheese-lovers)
  • The toppings of your choice in small bowls

Grease two large rectangular cookie sheets and sprinkle them with a couple of tablespoons of cornmeal. Preheat the oven to 500 F.

Each person gets a ball of dough – 1/4 of the recipe below. They use their hands to stretch and flatten their pizza dough and set the resulting square or circle on their half of a cookie sheet. Top with as much pizza sauce as you like, your choice of pizza toppings (list below), and as much grated cheese as you like.

Bake for 8 to 10 minutes, until the cheese is melted and starting to brown.

Sauce Recipe

  • 14 oz can tomato sauce
  • 6-oz can tomato paste
  • 3 T olive oil
  • 1/2 t rosemary
  • 1/2 t thyme
  • 1 t oregano
  • 1 t onion powder
  • 1 t basil
  • 2 cloves of garlic, grated or chopped
  • 1/2 t salt, or to taste
  • 1/4 t black pepper, or to taste
  • Optional: Fennel seeds, red pepper flakes

Heat the olive oil in a medium saucepan and cook the garlic for about a half a minute. Stir in the spices and the tomato paste and cook for a minute, then stir in the tomato sauce. Simmer for about 10 minutes.

Dough Recipe

  • 1 package dry yeast
  • 3 C bread flour
  • 2 t salt
  • 1 C warm water
  • 1/4 C olive oil

Put the water and olive oil into a measuring cup. Put the yeast, flour, and salt into a food processor with the “S” blade. Turn on the machine to combine the dry ingredients. While the blade is running, very slowly pour the water and olive oil into the machine. Leave it running for a couple of minutes, until the dough forms into a rough ball and goes “thumpety-thump” against the side of the machine.

Turn off the food processor. Lay a 12-inch piece of plastic wrap on the counter. Put the dough on the plastic wrap and form it into a rectangle, about 8 inches by 6 inches.

Poke your fingers into the dough, making indentations all over the top surface. Fold the left third of the dough over the top and poke that section. Then fold the right third over (like a letter) and poke that section. Flip it over and poke the bottom. Then wrap it up in the plastic wrap and let it sit for about 20 minutes.

Divide the dough into four sections. Form into balls and hand one to each pizza-maker.
