This is a nice fall dish and a good offering for holiday parties:
1 T butter
1/2 C chopped pecans
12 oz cream cheese, softened
1 1/2 C shredded sharp cheddar (6 oz)
1/2 C crumbled blue cheese (2 1/2 oz)
1 C canned pumpkin
2 cloves garlic, minced (2 tsp)
2-4 T sherry
In a small skillet, melt butter, saute pecans 1 minute or until golden. Set aside to cool. In a large bowl, beat together cheeses, pumpkin, garlic, and sherry until creamy. Spoon into serving bowl and sprinkle with pecans. Cover and chill several hours or overnight. Serve with crackers.
Variation: omit sherry, add 1/2 tsp Worcestershire and 1/4 tsp cumin.
