TVP Tofu Burgers

I just tried this out, and I give it a thumbs-up. The result is similar to a homemade Garden Burger, and they brown well and stick together without any egg for binder.

3/4 C boiling water
2 T soy sauce
1 C TVP (texturized vegetable protein)
1/4 C onion, finely minced
1/4 green pepper, finely minced
1 clove garlic, minced
1/2 lb firm tofu, mashed
1/4 C catsup
1 t dark sesame oil (optional)
1 T Dijon mustard
1/4 t black pepper
Pinch of red pepper
1/2 C whole wheat flour
2 T olive oil, divided

Mix together the boiling water and soy sauce. Pour over TVP, cover, and let stand for about 10 min. Saute the onion, green pepper, and garlic in a little of the olive oil for a couple of minutes, until soft. In a large bowl, combine the sauteed vegetables with the TVP mixture, tofu, catsup, mustard, spices, and flour and mix well.

Form into 6 patties and fry in the remaining oil in a skillet. Let them sit on a platter for a few minutes before serving, this will let them firm up a bit. Serve on whole grain buns with your choice of lettuce, tomato, onion, cheese (blue cheese is especially good), mayonnaise, mustard, and catsup.
