Vegan Roasted Pork

  • 3 cans jackfruit in brine
  • 1/2 C sofrito
  • 1/4 C good quality vegetable oil
  • 1 T oregano
  • 2 T minced garlic
  • 1 T lime juice
  • 1-1/2 t cumin
  • 1 t chili powder
  • 2 t paprika
  • 1 t onion powder
  • 1 t ground annato
  • 1/2 t ground coriander seed
  • 1 T black pepper
  • 1 T salt

In a large pot, boil the jackfruit for 30 minutes in plain water. Drain and allow to cool. Using your hands, squeeze and shred the jackfruit, removing the seeds at the same time.

Stir the jackfruit together with the rest of the ingredients and marinate for at least 6 hours (or overnight).

Preheat the oven to 400. Line a baking sheet with parchment paper or a silicone mat and spread the jackfruit on it in a single layer. Roast for a half hour, stirring occasionally, until it’s golden and a little bit crispy on the edges.
