1 C white chocolate chips
2 C vanilla wafer cookies
1/2 C Irish Creme liqueur
1 t light corn syrup
1-1/2 C powdered sugar, divided
1-1/2 C shelled unsalted pistachios (can substitute slivered almonds)
1/2 C granulated sugar
Process chips and cookies in food processor until mixture resembles coarse crumbs.
Add liqueur and syrup and process until crumbs are moistened. Add 1 C powdered sugar and process until the mixture forms a ball.
Add pistachios and pulse until nuts are coarsely ground and evenly distributed.
Form mixture into balls. Place remaining 1/2 powdered sugar and granulated sugar in a shallow bowl, mixing well. Roll balls in sugar. For best flavor, store in a wax-paper-lined, airtight container at room temperature for a few days before eating.
Makes 36 115-calories cookies.
