A decadent sandwich cookie, not to be confused with moon pies.
Cookies:
2 C flour
1 C sugar
1 egg
1/3 C unsweetened cocoa
1/3 C shortening or oil
1-1/2 t baking soda
1 t vanilla
1 C milk
Filling:
1 C milk
4 T flour
1 C sugar
1/2 C shortening
1 t vanilla
Mix cookie ingredients together and drop large tablespoons onto a greased cookie sheet. They will grow quite a bit, so leave lots of room around them. Bake for 7 to 10 minutes at 400 degrees and cool on a rack.
For the filling, bring the flour and milk to a boil until thick, stirring constantly. Cool. With a mixer, cream the shortening with the sugar until fluffy. Add the vanilla and mix well. Then add the cooled milk and flour mixture. Mix well on high speed until fluffy. Spread a thick layer on one cookie and top with another cookie.
