Woopie Pies

I copied the original recipe card that said “woopie,” which I suspect was misspelled. It should probably be “whoopie,” but I already had a whoopie pie recipe on the F-G. This version, however is an authentic Lancaster County version and probably superior to the other one.

4 C sifted cake flour (heaping)
2 eggs
2 C granulated sugar
1 C hot water
1 C shortening
2 t salt
1 C cocoa (heaping)
2 t soda
1 C sour or buttermilk
2 t vanilla

Cream shortening, add sugar, eggs, and beat. Sift dry ingredients together (except soda), add milk and vanilla. Put soda in hot water and add last. Drop on cookie sheet 400 F – 8 min.

Filling
4 C powdered sugar
3/4 C butter or crisco (or half butter, half crisco)
vanilla and salt
Milk to moisten
Beat together – the more you beat it, the creamier it gets.
