Zucchini-Kidney Soup with Tomatoes

This has a wonderful blend of flavors, and it’s only 600 calories for the entire pot. It’s a filling lunch or a perfect dinner for two people on a diet.

3 T bacon bits
1 t bacon grease or butter
1 medium zucchini, grated
1 can diced tomatoes
1 can kidney beans
1 t basil
1 t oregano
Red pepper flakes (to taste)
Salt (to taste)

In a medium saucepan, heat the bacon grease or butter and the bacon bits. Saute the zucchini for a couple of minutes. Stir in the remaining ingredients and cook for about five minutes.

Garnish with a tiny amount of freshly-grated parmesan, romano, or asiago cheese.
